Modifying your favourite recipes

Experiment!
Experimenting with your favourite recipes not only reduces fat but adds variety to your cooking. Here are some key tips:

· Fat helps to add flavour to foods so reducing fat may reduce flavour in some recipes. To give them a boost add fresh, dried or pureed fruits or honey to sweets and desserts and herbs, spices, tomato paste, vinegar or citrus juices to savoury foods.
· In baked products fat adds texture, flavour and   moisture so changing the fat content too much may lead to poor quality cakes and biscuits. Start out slowly by choosing low-fat milks, egg whites and   experimenting with soft cheeses such as ricotta. A good idea is to try and keep the amount of liquid the same so if you reduce the oil top it up with low-fat milk or fruit juice. Each recipe will be different so see what works for you!
· Fat as a thickener can be replaced by adding a little cornflour dissolved in cold water to sauces, pie fillings and casseroles. Gelatine is also an excellent way to add texture to desserts and it doesn’t require cooking.

Remember
There are currently plenty of low-fat alternatives for many foods available from your local supermarket. Choosing these options is an important and easy way to help reduce your fat intake but having the ability to modify your own recipes gives you more variety and  satisfaction.
